Is it possible to have a report to show voucher redemption rates?

e.g. if you sold 300 vouchers in the year 2018 how many are still left to be redeemed (as of 7th Jan 2022)? Ideally the report should show figures on how many are left along with the value yet to be redeemed. This could be done manually but would take far too long.
