Using a Chanel colour to ID hotel guests vs restaurant guests

Thanks for your consideration in advance,
As a hotel we always have to make tables available for our guests.
This means we have our areas split into guest and non guest areas,
if the hotel is quiet we move bookings from the non guest areas into the guest areas to make more tables available for outside diners.
if we were able to allocate a different channel colour (ideally this would be possible even after making a booking) for hotel guests this would make this juggling act so much easier.
we currently also try to use an online booking widget which therefore gives a different colour... but this causes other problems as you dont have administrator rights to modify complicated bookings etc
