You can enable different payment methods within the diary if you allow customers to pay deposits/payments in a different way other than Stripe.

This allows you to record correctly how payments are made.

Payments - Payment Method

Go to settings - payments - payment methods.

To enable a payment method click on the red circle, this will change the payment method to green confirming it is now enabled.
